Every time we drive by this location (to and from the artisan town of Otavalo), we wonder what these white things are in the valley...though assume they have something to do with flowers/roses or something of the like. Any ideas?

A friend of mine who recently returned to Ecuador for a visit told me there were "greenhouses" everywhere now, I presume to grow flowers. Maybe that's what your photo has captured?
Greenhouses, most likely.
Anyway the ally looks mgnificant to me
I think they are greenhouses too. perhaps they are frames covered in some sort of plastic. they do that here in Calif. its cheaper and works quite well.
I do not know the answer but I can guess it is some flower or food plant that needs some shade and the cover provides that, or, it is some flower or food plant that needs to be keep away from some insects.
Here, where I live, many years ago, farmers had things like this where they grew tobacco from seeds. When they were about ten inches tall they were pulled up and planted in the fields.
Today is the second episode of the mother with her head in the throat of the baby.
My cousin who lives in a little town in Ecuador (about 1 hr from Quito) had green houses for tomatoes that looked very similar to what is in the photograph.
Hi! What you are seeing is definitely "invernaderos" (greenhouses). Ecuador is a producer of top quality roses which are exported worldwide. For five years I worked at my family's rose farm which is located in Otavalo, and when driving you see these greenhouses all over!
