Here is one of the outdoor fruit and vegetable shops found in and around Quito. You can easily fill a grocery bag with a huge variety of produce for under a dollar.

My brother served in the Peace Corps in the 1970's and lived near Quito. He has told me how much he loved the country and the people. I think maybe it's my turn to come visit.
Ecuador is a wonderful country, and the people are truly so kind (not to mention forgiving when it comes to me butchering their language!). It's a great place to vacation - I'm sure you would find plenty to keep you occupied.
